MARY'S HOMESTEAD HANDBOOKS GRAINS AND RECIPES FOR BAKED GOODS GUIDELINES FOR GRAINS THESE RECIPES ARE FROM THE GRAINS HANDBOOK. If you are going to store grains for a longer period of time please read JAMES TALMAGE STEVENS book called 'MAKING THE BEST OF BASICS." If you do not want to buy the book the library has it. All the libraries in the country have a world catalog. You can have a book sent to your location from anywhere in the US. Packages flour from the supermarket lasts over 10 months before opening. There is long-term storage that lasts over 10 -15 years. SEE MARY'S HOMESTEAD LONG TERM FOOD STORAGE. THE LINK IS ON THE PREPARATION TAB. If you are just storing 3 months grains use plastic or glass. Plastic containers must have a plastic bag and be tightly closed.I now use glass for grains and store it in a cool place. HERE ARE SOME SUGGESTIONS FOR GRAINS Barley, cracked wheat, barley flakes, buckwheat, couscous, cornmeal, (yellow and blue) popcorn, rolled oats, instant oats, white rice, brown ice, Wheat berries rye berries, split berries, triticale berries, oat groats, wheat pastry berries PASTA IDEAS: vermicelli, linguine, fettuccine, tortellini, spaghetti, and lasagna.

CANNING APPLES 2 1/2 to 3 pounds apples per quart, sugar, water Wash, core and peel apples. Apples may be sliced 1/4-inch thick, quartered or halved. Treat to prevent darkening. Make a light or medium syrup; keep syrup hot. Drain apples. Gently boil apples in syrup 5 minutes. Pack hot apples into hot jars, leaving 1/2-inch headspace. Ladle hot syrup over apples, leaving 1/2-inch headspace. Remove air bubbles. Adjust two-piece caps. Process pints and quarts 20 minutes in a boiling water canner. (This is for Mo. Please check with you extension agent for the proper times in your area.) NOTE: Any variety eating apple may be used for canning. It is best to select a variety good for cooking to help maintain shape and texture. PLEASE FOLLOW THE DIRECTIONS ON THE PACKAGE FOR THE CAPS AND LIDS WHEN CANNING IN THE US. YOU NOW HAVE TO KEEP YOUR LIDS SIMMERING IN THE HOT WATER. THERE IS ONLY ONE BRAND OF LIDS IN AMERICA. PLEASE FOLLOW THE DIRECTIONS ON THE PACKAGE. YOU MAY ALSO CHECK WITH YOUR LOCAL EXTENSION AGENT. CORNMEAL RECIPES POLENTA 4 cups boiling water, 11/2 cups polenta, 1 tsp. salt Bring water to boil, add salt and stir in the polenta. Cook and stir until the mixture is thick and it takes about 20 minutes. Be sure to keep stirring and do not burn. I am an Italian. Here is what I remember from childhood. First eat a dish with some good parmesan cheese, preferably IMPORTED ITALIAN cheese and butter. Second, eat the polenta with a good tomato sauce with more Italian parmesan cheese. SPOON BREAD 1 1/2 cups milk, 1/2 cup cornmeal, 1/4 cup grated parmesan cheese, 1 tb. butter, 1/2 tsp. baking powder, 1 egg yolk, i stiffly beaten egg white. In a sausepan stir one cup of the milk into the cornmeal, cook, stirring,constantly till the mixture is thick, pulls away from the sides of the pan. Remove from the heat, stir in the remaining milk and 1 tb. butter. Stir 1 cup of the hot mixture into the egg yolk; return to saucepan. Fold in the beaten egg whites. Pour into a greased 1 quart casserole. Bake in a 32F. oven for 35-40 minutes.You may insert a knife in the center and if it comes out clean it is baked. Makes 4 servings.
