HINTS FOR USING WHEAT If possible, grind wheat just before you use it to retain its full nutrition. It is rich in vitamin E and wheat germ, both of which are soon lost after grlnding. Wheat sprouts are good as a snack or in salads. The sprouts add vitamin C and vitamin A to your diet. USES FOR WHEAT Flour, cereal for breakfast, chili, substitute for potatoes in stew, substitute for rice in fruit - salad, add (cooked ) to tossed salad. HONEY SUBSTITUTION (CONVERSION CHART FOR RECIPES) Use 3/4 c. honey for 1 cup sugar or: add flour plus 4 t. plus 1/4 t. soda HINT: cook cakes and other baked goods made with honey on lower temperature. HINT: Honey will sofen cookie batters. If you want the crisp variety of cookies, add 4 tablespoons flour for each 3/4 cup honey used. TORTILLA PRESS Non-electric, leveraged handle quickly flattens dough into thin 6" diameter tortillas all ready for cooking. Use wax paper for easy removal. Cast aluminum. EASY TORTILLAS 5 C. yellow cornmeal, 1/2 tsp. salt, 1/2 c. bread flour, 1 egg, lightly beaten, 2 c. water Combine cornmeal, salt and flour in bowl. Stir in egg and water until smooth. Heat lightly greased 6-inch nonstick skillet over medium heat. Spoon 3 to 4 tablespoons batter into hot pan. Turn and twist immediately to cover bottom of pan. Cook 30 seconds, then flip and cook other side. Do not brown tortilla. Layer cooked tortilla with paper towels. Makes about 20 tortillas. PERMISSION FROM VICKI TATE

MORE WITH LESS COOKBOOK BY JANZEN LONGACRE The author gathered 500 recipes along with information and suggestions from Mennonite kitchens on how to eat better and consume less of our limited resources. I use this cookbook and it is one of my favorite cookbooks. It tells you how to save money and eat nutritious meals. The nutrition information is excellent. It has information from THE NATIONAL ACADEMY OF SCIENCES AND THE NATIONAL RESEARCH COUNCIL, U.S.A. The recipes are wonderful and I use it summer and winter. This is a good book to have if you are in ministry or , if you support extra family members and you resources are low. The information on how to save with your budget is the best I have found.
