This is my major one canning and preserving
book. You will need it when you can tomatoes. Because tomatoes are now a high-acid fruit , it is necessary to
can them corectly. It is now suggested by the USDA that you add lemon juice or vinegar. Tomatoes are Mary's Homestead number
